Pixie Bakes' vegan biscoff brownie!

If you're looking for a vegan treat recipe to wow your friends, look no further than Tintwistle's very own Pixie Bakes, which specialises in plant-based treats...  

The family-run coffee shop and cakery has shared its recipe for vegan Biscoff brownies as part of our focus on local campaign for summer - enjoy!  

Ingredients :  

300ml Oat Milk 100ml Vegetable Oil  

1 Tbsp Apple Cider Vinegar  

190g Plain Flour  

2 Tsp Baking Powder  

70g Cocoa Powder  

250g Dark Chocolate  

200g Biscoff Spread  

200g Light Brown Sugar

1 packet of Biscoff Biscuits  

100g Caster Sugar

Makes 8-12 Brownies  

  1. Preheat the oven to 180 degrees (Gas 4, 160 fan)
  2. Put the oat milk, apple cider vinegar and baking powder in a large bowl. With an electric whisk, mix for around 3 minutes until foamy.
  3. Melt the chocolate in a plastic bowl on the lowest setting of the microwave until melted. Making sure you stir the chocolate every 30-60 seconds.
  4. Give the oat milk mixture another quick beat with the electric whisk and slowly add the sugar. Once added and mixed through slowly pour in the melted chocolate and vegetable oil. 
  5. Once combined it should be shiny and smooth. 
  6. Sift the flour and cocoa powder together ensuring there are no lumps. With the electric whisk slowly add the flour to the wet mixture until fully combined. 
  7. Pour half the batter into a lined tin (8x12inch) and smooth to the edges. Put the biscoff spread in a microwave safe bowl and melt until runny. Slowly pour 3/4 of the biscoff spread on top of the brownie. Saving 1/4 of it to put in a piping bag. 
  8. Pour the other half of the brownie mixture on top. Once smoothed to the edges, drizzle the melted biscoff on top and using a small end of a fork swirl the biscoff spread around the tin. 
  9. Before putting in the oven top with biscoff biscuits.
  10. Put the tray of brownie into the oven for 30 minutes.
  11. Check after 30 minutes and if it has a slight wobble in the middle that means its ready. If not, put it back in the oven for 5 minutes each time until you get the slight wobble.
  12. Once out of the oven, leave to chill and cool. We leave our brownies overnight so they're completely set. 
  13. Finally cut with a hot knife and enjoy!
